3 tbsps of oil
2 cloves of garlic, chopped
1 onion, chopped
1 handful of mushrooms, sliced
Other small veg like a chopped pepper, a handful of peas, sweetcorn, chopped green beans, spinach, sliced cabbage, thinly sliced carrot, etc.
A handful of nuts
a cupful of rice.
1 tsp of salt
Fry the onions and garlic in oil til they're soft. In the meantime, sort out the rest of the veg, then add that to the frying mixture with the nuts, and stir for a minute or two. Add the rice, stir until the rice is mixed in. Add a cup and half of water and the salt, bring to the boil. Now, turn the heat down, put the lid on the pan and leave to cook for about ten minutes, or until all the water's been absorbed by the rice. Fluff it up and scoff. Could put some soy sauce on it.
