A couple of handfuls of vegetables that will cook in a couple of
minutes like frozen Peas, sweetcorn, french beans, broccoli, cauli,
chopped cabbage, broad beans, etc.
Boil some pasta. While it's cooking, chop up an onion and a few cloves
of garlic, and grate a handful of parmesan. When the pasta's cooked, put
it in a colander to drain. Put the pan back on the heat and put a bit of
oil in. Fry the onion and garlic. After a few mins, add about a quarter of a pint of water, a teaspoon of
salt, and a teaspoon of yeast extract and a half teaspoon of dried basil and oregano, and a squirt of tomato puree if you've got them. Cook for a few mins, stirring then add a handful of frozen peas and a handful of frozen sweetcorn. Cook for a couple of minutes, add the parmesan, a couple of tablespoons of creme fraiche or yoghurt if you've got either, stir a couple of times, then serve.
